Oh So Simple Granola Bars

ABOUT THIS RECIPE

These bars are easy and quick to make, and packed with good-quality energy!

The recipe is adaptable so you can play with different ingredients (eg. fruit, nuts) - as long as there are dates and chia (or flax) seeds to help bind.


Ingredients

1 Cup Dates, pureed (date paste from OM works amazingly, or puree/mash whole dates)

1/4 Cup Maple Syrup

1/4 Cup Nut Butter

1 Cup Nuts or Seeds, loosely chopped (eg. roasted almonds or raw walnuts)

1.5 Cup Oats (sub. GF oats for gluten free bars)

2 Tbsp Chia Seeds  (sub. ground flax seed)

Preparation

  1. Line a square tin (18cm / 7’’ sides) with a strip of parchment paper down the middle with extra length at each end (to help lift the block out once hardened)

  2. Make a chia egg: mix the chia seeds with 4-5 Tbs water and let sit for 5 minutes

  3. Warm the date puree, syrup, & nut butter together to help ease mixing (low-heat on stove or microwave for 30sec)

  4. Mix all ingredients together in a large bowl

  5. Press batter into the lined tin, firmly and evenly.

  6. Cool in fridge for at least 50mins (I often leave mine to the next day)

  7. Remove hardened mix & cut into 8 even bars.
