ABOUT THIS RECIPE
These bars are easy and quick to make, and packed with good-quality energy!
The recipe is adaptable so you can play with different ingredients (eg. fruit, nuts) - as long as there are dates and chia (or flax) seeds to help bind.
Ingredients
1 Cup Dates, pureed (date paste from OM works amazingly, or puree/mash whole dates)
1/4 Cup Maple Syrup
1/4 Cup Nut Butter
1 Cup Nuts or Seeds, loosely chopped (eg. roasted almonds or raw walnuts)
1.5 Cup Oats (sub. GF oats for gluten free bars)
2 Tbsp Chia Seeds  (sub. ground flax seed)
Preparation
Line a square tin (18cm / 7’’ sides) with a strip of parchment paper down the middle with extra length at each end (to help lift the block out once hardened)
Make a chia egg: mix the chia seeds with 4-5 Tbs water and let sit for 5 minutes
Warm the date puree, syrup, & nut butter together to help ease mixing (low-heat on stove or microwave for 30sec)
Mix all ingredients together in a large bowl
Press batter into the lined tin, firmly and evenly.
Cool in fridge for at least 50mins (I often leave mine to the next day)
Remove hardened mix & cut into 8 even bars.
